Recipe: Spicy Cilantro Slaw
What could be better than another recipe with cilantro? This recipe is absolutely refreshing for those of you who love cilantro and maybe a little heat. It is also fantastic as a topping for sandwiches as well as a traditional side.
This recipe is adapted from a recipe in The Herbal Kitchen: Cooking with Fragrance and Flavor by Jerry Traunfeld
Recipe: Spicy Cilantro Slaw
Ingredients
- 1/2 cup light mayonnaise
- 1/2 cup apple cider vinegar
- 4 tablespoons lime juice
- 1/4 cup soy sauce
- 2 tablespoons sugar
- 2 teaspoons Sriracha hot sauce
- 1 red or yellow bell pepper
- 1 small bunch of cilantro, finely chopped, approx. 1 1/2 cups
- 1 carrot
- 1 small cabbage, approx. 2 lbs
Instructions
- Finely slice the cabbage.
- Shred the carrot
- Finely dice the bell pepper and cilantro
- Combine all dressing ingredients through the Sriracha hot sauce in a bowl and whisk together.
- Pour dressing over vegetables in a large bowl and mix thoroughly
- Transfer slaw to a 1 gallon zip lock bag, seal and place the bag in a glass bowl in case of leaks.
- Wait at least 1 hour before serving. Will keep for several days in the refrigerator.
