Recipe: Classic Beef Stroganoff in a Slow Cooker

Recipe is adapted from Classic Beef Stroganoff recipe in Biggest Book of Slow Cooker Recipes by Better Home and Gardens. The recipe can be prepped in less than 30 minutes and be ready for you when you get home. Certainly not as good as my mother-in-law’s Stroganoff, but I will let my wife carry that mantle.

Ingredients

  • 1 1/2 lbs of Beef
  • 1 tbsp olive oil
  • 16 oz mushrooms
  • 1 cup diced onion
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp dried thyme
  • 1/4 tsp pepper
  • 1 bay leaf
  • 2, 15oz cans of beef broth
  • 1/3 cup dry sherry
  • 8oz sour cream, it is fine to use light sour cream
  • 1/3 cup flour
  • 1/4 cup water
  • cooked noodles

Instructions

  1. Cut beef into bite size pieces.
  2. Brown beef in saute pan
  3. Combine all ingredients through the dry sherry in the crock pot
  4. Cook on low for 8 hours or high for 4 hours
  5. In a bowl, combine sour cream, flour and water, once thoroughly mixed, add to crock pot and mix
  6. Cook for an additional 30 minutes
  7. Server over noodles
